It’s simple. We believe that good food is essential to a healthy life. So our commitment is to help you power your life on campus with good food and a dining program that makes it easy for you to eat right.
It’s why we have healthy and wholesome choices available every day and it’s why we have nutrition and wellbeing programs that help take some of the mystery out of healthy living.
Registered Dietitian
Shelby has been passionate about health and well-being since the age of thirteen when she connected the food she ate with her physical performance as an athlete. In the two decades to follow she went on to study nutrition and dietetics at the University of MN where she interned in hospitality. She completed her dietetic internship and clinical career at the Minneapolis VA. Over the last several years Shelby has been running her own business helping others use food as a tool for optimizing performance. When Shelby isn't here at Ranger Dining, she enjoys trying new restaurants, hiking with her rescue pup, Dahlia, and exploring new parts of the world.
Shelby works closely with the culinary team and management staff to ensure there is a variety of nutrient-dense choices available across campus every day. Healthy dining options are vital for overall well-being and nourishing the campus community is a top priority.
She is available to provide guidance to ensure healthy eating as a lifestyle here on campus. Our Registered Dietitian can aid the campus with dietary allergies or preferences as well as provide individual and group nutrition tours to familiarize the campus community with the dining opportunities.
